In summer, I always cook 2 or 3 glasses of lemon curd occasionally, because I like to fill my “Tarte au Citron” with it. The lemon curd is also delicious on fresh brioche or as a dessert layered with yogurt. You can also marbleize a cheesecake with fruity lemon cream. Tarte au Citron – Lemon Meringue Pie This is a super delicious fresh lemon tart with meringue, known in France as “Tarte au Citron” and in England as “Lemon Meringue Pie”. The tart is made with a delicious buttery shortcrust base and delicious lemon curd and topped with light and airy meringue. You can also halve the recipe or the homemade lemon cream, the cream is then exactly enough for one” Tarte au

Equipment
- 1 cutting board
- 1 knife
- 1 Spoon
- 1 pot
- 1 whisk
- 1 juicer
Ingredients
- 6 Lemons larges
- 6 Eggs
- 300 g sugar
- 180 g butter
- 2 tsp corn flour or cornstarch
- 2 lemon peel zest 2 lemons
Instructions
- Wash the lemons thoroughly under running water and grate the zest from 2 lemons. 2.
- Then beat the eggs and mix them in a bowl. Then weigh out the butter.
- Squeeze the lemons and filter the juice through a sieve and pour into a pot and heat it up.
- Mix the lemon juice with the sugar very well.
- Slowly whisk the very cold butter into the syrup. Add the zest and cornstarch mixed with a little juice to the mixture.
- On the lowest stove setting or flame, very slowly add the egg mixture to the syrup, stirring constantly. Be very careful that the egg does not flocculate. Otherwise, remove the pot briefly from the heat. Continue stirring until the mixture thickens and then pour into
- pre-boiled jars. Once they have cooled down, I store them in the refrigerator.
